Sweet And Sour Fish Fillets Recipe

Ingredients
1/2 cup water
1/4 cup cider vinegar
1 teaspoon cornstarch
2 tablespoons honey
1/4 teaspoon grated fresh ginger
2 cloves garlic
2 tablespoons tomato paste
1 1/4 pounds cod fillets
2 scallions, thinly sliced lengthwise (garnish)
Directions
Place the water, vinegar, and cornstarch in a small saucepan and stir until the cornstarch is dissolved.
Place the pan over low heat.
Add the honey and ginger.
Push the garlic through a garlic press into the pan.
Stir in the tomato paste.
Bring to a boil, reduce heat, and simmer for 10 minutes, stirring occasionally.
Set aside and keep warm until ready to use.
While the sauce simmers, place enough water in a large skillet to measure 1/2 inch deep.
Bring to a boil.
Reduce heat to a slow simmer and gently add the cod.
Cover and poach the fish for about 8 to 10 minutes or until opaque throughout.
Remove the fish to a warm serving platter and spoon the sweet and sour sauce on top.
Garnish with scallions, if desired.
