Ingredients
| 12 oz. fish fillets, about 1/2 inch thick, cut into 1 1/2-inch pieces | ||
| 1 small green pepper, cut into 1/2-inch strips | ||
| Pineapple chunks | 1 Can (10oz), drained | |
| 1/2 cup unsweetened pineapple juice | ||
| 1 tablespoon reduced-sodium soy sauce | ||
| 1 tablespoon no-salt ketchup | ||
| Honey | 1 Tablespoon | |
| Cornstarch | 2 Teaspoon | |
| Cider vinegar | 2 Teaspoon | |
| Garlic powder | 1/8 Teaspoon | |
| Ground ginger | 1/8 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Dash turmeric | ||
| 1 medium tomato, cut into 8 wedges | ||
| 1 tablespoon sliced green onion | ||
Directions
In 2-quart casserole, combine fish pieces and green pepper.
Cover.
Microwave at High for 4 to 7 minutes, or until fish flakes easijy with fork, stirring gently once.
Add pineapple chunks.
Set aside.
Place 1/2 cup pineapple juice in 1-quart casserole.
Stir in soy sauce, ketchup, honey, cornstarch, vinegar, garlic powder, ginger, pepper and turmeric until blended.
Microwave at High for 2 1/2 to 4 minutes, or until mixture thickens and bubbles, stirring 2 or 3 times.
Add tomato and onion to fish and green pepper.
Add sauce.
Gently stir to coat.
Cover.
Microwave at High for 2 to 4 minutes, or until heated through, stirring once.
