 Salt1/2 Teaspoon
 Cornflour2 Tablespoon
 4 haddock fillets, 200g each
 Egg white1 , beaten
 Vegetable oil625 Milliliter
 Brown sugar1 Tablespoon (SAUCE:)
 Rice vinegar2 Tablespoon (SAUCE:)
 Chicken stock1 Tablespoon (SAUCE:)
 Chilli sauce1 Tablespoon (SAUCE:)
 Orange juice2 Tablespoon (SAUCE:)
 1 tablespoon cornflour mixture

Directions

On a plate, mix together salt and cornflour (cornstarch) then coat fish evenly, shaking off any excess.
Dip each fillet in egg white.
In a wok, heat oil.
Add fish and deep fry for 5 minutes until golden.
Drain on absorbent kitchen paper and keep warm.
In a medium saucepan, mix together sauce ingredients, bring to the boil, stirring, then simmer for 3 minutes.
Transfer the fish to a warmed serving plate and pour over sauce.
