| Cornflour | 2 Tablespoon | |
| 4 haddock fillets, 200g each | ||
| Egg white | 1 , beaten | |
| Vegetable oil | 625 Milliliter | |
| Brown sugar | 1 Tablespoon (SAUCE:) | |
| Rice vinegar | 2 Tablespoon (SAUCE:) | |
| Chicken stock | 1 Tablespoon (SAUCE:) | |
| Chilli sauce | 1 Tablespoon (SAUCE:) | |
| Orange juice | 2 Tablespoon (SAUCE:) | |
| 1 tablespoon cornflour mixture | ||
Directions
On a plate, mix together salt and cornflour (cornstarch) then coat fish evenly, shaking off any excess.
Dip each fillet in egg white.
In a wok, heat oil.
Add fish and deep fry for 5 minutes until golden.
Drain on absorbent kitchen paper and keep warm.
In a medium saucepan, mix together sauce ingredients, bring to the boil, stirring, then simmer for 3 minutes.
Transfer the fish to a warmed serving plate and pour over sauce.
