Ingredients
1/4 teaspoon ground ginger
2 teaspoons cornflour
450g haddock or cod fillets, cut into small pieces
1 tblspn corn oil freshly chopped parsley, to garnish
THE SAUCE
225g tomatoes, drained and chopped
1 tblspn light soy sauce
1 tblspn tomato puree
2 tspn cornflour
5 tblspn water
2 tblspn dry sherry
1 tspn brown sugar
Directions
Mix the ginger with the cornflour and use to coat the fish.
Heat the oil in a wok or frying pan, add the fish and stir-fry for 2-3 minutes.
Remove from the pan with a slotted spoon and keep warm.
Wipe the wok clean with absorbent kitchen paper and reduce the heat.
Place the tomatoes and soy sauce in the wok.
Mix the remaining sauce ingredients together, then pour this mixture into the wok and cook, stirring, until thickened.
Add the fish and heat through for a few seconds.
