Sweet And Sour Chicken Salad Recipe
Sweet and sour chicken salad is a fruited vegetable chicken salad. Prepared with a cooked dressing of chili sauce, apple juice, vinegar, sugar and corntrach for thickness, the sweet and sour chicken salad is combined with zucchini, water chestnuts, apples and celery to prepare. served on lettuce lined plates it makes a gret brunch or lunch addition.
Ingredients
1/2 cup Chili Sauce
1/3 cup apple juice
1 tablespoon Distilled White
Vinegar
2 teaspoons cornstarch
2 teaspoons granulated sugar
2 cups cubed cooked chicken
1 can (8 ounces) sliced water chestnuts, drained
1 small zucchini, halved lengthwise, sliced
1 medium-size red apple, cut into chunks
3/4 cup sliced celery
Leaf lettuce
Apple wedges
1 cup chow mein noodles
Directions
In 1-quart saucepan, combine chili sauce, apple juice, vinegar, cornstarch and sugar.
Bring to a boil over medium heat, stirring constantly.
Boil 1 minute or until thickened and clear; cool slightly In medium bowl, combine chicken, water chestnuts, zucchini, apple chunks and celery Pour warm dressing over chicken mixture; mix well.
Line individual plates with lettuce; arrange apple wedges on lettuce.
Spoon chicken mixture on top.
Sprinkle with chow mein noodles.
