 Vegetable oil2 Tablespoon
 15 ounces skinless boneless chicken breasts, cut into 1-inch cubes
 Carrots1 Cup (16 tbs), grated
 Red bell pepper1/2 Cup (16 tbs)
 Green bell pepper1/2 Cup (16 tbs)
 Garlic2 Clove (5gm), minced
 Pineapple chunks1 Cup (16 tbs), drained
 White vinegar3 Tablespoon
 2 tablespoons low-sodium soy sauce
 Firmly packed brown sugar1 Tablespoon
 Cornstarch1 Tablespoon
 Ground ginger1 Teaspoon
 2 cups cooked long-grain white rice

Directions

1. In large skillet, heat oil; add chicken. Cook over medium-high heat, stirring occasionally, until lightly browned, about 3 minutes. Add carrots, peppers, and garlic; cook, stirring frequently, 2 minutes longer.
2. In small bowl, combine reserved pineapple juice, 2 tablespoons water, and remaining ingredients except rice. Pour over chicken mixture and stir in pineapple chunks. Cook until just boiling, about 2 minutes.
