Ingredients
1 cup pineapple chunks canned in juice
2 tablespoons arrowroot
3 tablespoons apple cider vinegar
3 tablespoons honey
2 teaspoons no salt ketchup
Dash cayenne pepper (optional)
1/4 cup Health Valley Fat-Free Chicken Broth
2 teaspoons minced fresh ginger or 3/4 teaspoon powdered ginger
1 large onion, cut in crescents
2 cloves garlic, chopped
1 cup quartered mushrooms
1 green pepper, cut in 1 '/2-inch strips
3/4 pound boned, skinless, chicken breast meat, cut in 1 -inch pieces
1/4 pound snow peas, ends trimmed
1 tomato, cut in bite-sized pieces
Directions
MAKING
1) Save 1/2 cup juice on draining pineapple.
2) Make a mixture of pineapple juice, arrowroot, vinegar, honey, ketchup and cayenne and keep aside.
3) In a wok or large skillet, heat 2-4 tablespoons broth and sauté ginger, onion, garlic, mushrooms, green pepper and chicken for about 10 minutes in it until chicken is cooked well, discarding any accumulated liquid.
4) Mix in juice mixture.
5) Take a pan and pour this mixture into it together with pineapple chunks, snow peas and tomatoes.
6) Thicken the sauce by cooking for 3-5 minutes over medium heat and then take off from heat, when done.
SERVING
7) Serve immediately.
