Sweet And Sour Asparagus Salad Recipe
Ingredients
| Asparagus spears | 1 pound | |
| Bacon Slices | 6 | |
| Wine vinegar | 1/4 Cup (16 tbs) | |
| Sugar | 4 Teaspoon | |
| Salt | 1/8 Teaspoon | |
| Pepper | 1 Dash | |
| Green onions | 2 Small, finely chopped | |
| 6 cups torn lettuce, well drained | ||
| 2 hard-cooked eggs, sliced | ||
Directions
In skillet spread out asparagus; cook in small amount of boiling, salted water till tender, 8 minutes.(Electric skillet 275°.)
Drain asparagus and set aside.
In skillet cook bacon till crisp.
Drain, reserving 2 tablespoons drippings; crumble bacon.
To reserved drippings in skillet add vinegar, 1/4 cup water, sugar, salt, pepper, onions, and asparagus; heat through.
Remove asparagus; toss lettuce with hot dressing 1 minute.
Arrange on plates with asparagus, egg slices, and bacon.
