Directions

Have the meat ground together twice.
Soak bread crumbs in milk.
Add meat; mix.
Saute onion in large skillet in 2 tablespoons butter.
Mix together seasonings, eggs, onion, and meat in a bowl.
Mix well; form into 48 small balls.
Melt butter in skillet; brown meatballs on all sides.
Remove and set aside to make the sauce.
Add garlic and 1 tablespoon butter to fat left in skillet.
Blend in 4 more tablespoons butter, the tomato paste, beef concentrate, and stock.
Add bitters here, if desired.
Stir mixture oversow heat until it thickens, then pour sauce into a lighted chafing dish.
Stir in sour cream.
Add meatballs to sauce, stirring once or twice to be sure all heats through.
The sauce may be poured into a casserole dish and heated in the oven, if preferred.
This recipe improves if made one day ahead of time.
