Swedish Tea Ring Recipe

Ingredients
1/2 tablespoon active dry yeast
2 tablespoons warm water (105°-115°F)
2/3 cup milk
2 tablespoons unsalted butter, softened
2 tablespoons sugar
1/2 teaspoon salt
3-3 1/2 cups flour
1 egg
Confectioners' Icing
Additional candied fruit
Filling
1 tablespoon unsalted butter, softened
1 tablespoon sugar
1/2 teaspoon grated lemon peel
3 tablespoons ground almonds
1/3 cup chopped mixed candied fruit
Directions
1 Dissolve yeast in warm water. Set aside for 5 minutes. Heat milk, butter, sugar, and salt to warm (105°-115°F).
2 Combine 2 cups flour, milk mixture, yeast mixture, and egg in mixing bowl. Mix thoroughly.
3 Add enough remaining flour to make a soft dough. Knead on lightly floured surface until smooth€”about 10 minutes.
4 Place in greased bowl, turning to coat top. Cover; put in warm place. Let rise until double€”about 1 hour.
5 Punch down dough. Cream butter, sugar, lemon peel, and ground almonds. Mix thoroughly.
6 Roll dough into a 10 x 14-inch rectangle. Sprinkle ground almond mixture over dough. Place candied fruit on top.
7 Roll up jelly-roll style and seal edge. Form in a ring, sealed edge down, on greased baking sheet. Seal ends together. Snip with scissors from outside edge every 1 1/2 inch. Turn cut pieces on side.
8 To keep hole round, place greased custard cup in center. (You can put a nondrip candle in the center for a Christmas touch when serving at the table.)
