Ingredients
2 tsp unflavored, unsweetened gelatin
2 tsp water
2 tsp freshly squeezed orange juice
1 tsp fresh lemon juice
1 tsp grated orange rind
4 eggs, separated
2 tsp sugar (optional)
3 pkts. concentrated acesulfame-K
Directions
In a small saucepan, combine the gelatin and water.
Let stand for five minutes, then cook over low heat, stirring until the gelatin dissolves.
Set aside to cool.
Mix in the orange juice, lemon juice, and orange rind.
Beat the egg yolks and sugar together until thick and light.
Add the gelatin mixture and the acesulfame-K and beat.
In a separate bowl, beat the egg whites until stiff.
Use a rubber spatula to fold gently into the other gelatin mixture.
The mixture will be evenly yellow when it is well combined.
Spoon into six dessert dishes.
