Swedish Almond Flan Recipe

I grew up eating this Swedish Almond Flan frequently and am happy to share this recipe with you. I just love Dessert recipes and this dish is my only favorite amongst them. Ingredients

 
Pastry:
 
1/2 cup plus 2 tablespoons (150 g) butter or margarine, softened
 
3 tablespoons (40 g) sugar
 
1/2 teaspoon vanilla extract
 
Pinch of salt
 
2 egg yolks
 
1-1/3 cups (200 g) all-purpose flour
 
Filling:
 
1/2 cup plus 1 tablespoon (125 g) butter, softened
 
1 cup (125 g) powdered sugar
 
2 eggs
 
Generous 1 cup (125 g) ground almonds
 
Grated peel of 1 lemon
 
3 tablespoons (20 g) all-purpose flour

Directions

To make pastry, beat butter or margarine, sugar, vanilla, salt and egg yolks in a large bowl.
Sift in flour.
Knead ingredients to make a soft dough.
Press into a ball and wrap in foil or plastic wrap.
Refrigerate 30 minutes.
Preheat oven to 350°F (175°C).
To make filling, beat butter, powdered sugar and eggs in a medium bowl until creamy.
Stir in ground almonds, lemon peel and flour.
On a floured surface, roll out dough to fit an 8-inch (20-cm) flan tin with a removable bottom.
Place dough in tin without stretching.
Spread filling over pastry shell.
Bake 45 minutes or until filling is light golden brown.
Cool in tin.
