Surprise Spinach Salad Recipe
Ingredients
12 c. torn washed spinach 3 L
4 oranges, peeled and sectioned
2-6 1/2 oz. tins tuna, white chunk meat 2-184 g tins
6 green onions, chopped
1 large avocado, peeled and sliced
2/3 c. salad oil 150 mL
1/4 c. lemon juice 50 mL
2 Tbsp. orange juice 30 mL
1 tsp. grated orange rind 5 mL
2 Tbsp. sugar 30 mL
1 1/2 tsp. salt 10 mL
1 tsp. paprika 5 mL
1 tsp. dry mustard 5 mL
1/2 tsp. celery seed 2 mL
Directions
Combine the first 5 ingredients in a large bowl and toss together lightly.
Refrigerate until just ready to serve.
Combine all the remaining ingredients in a small jar with a tight lid (or in a bowl with a whisk) and shake to blend completely.
Pour the desired amount of dressing over all the salad ingredients in the bowl and toss lightly to coat all ingredients.
Serve immediately.
