Peanut Butter Surprise Cupcakes Recipe
Surprise cupcakes are easy to prepare microwaved cupcakes topped with miniature marshmalloes. Baked with chocolate fudge cake mix and peanut butter, the surprise cupcakes are an anytime bake.
Ingredients
1 package (13.5 ounces) chocolate fudge chip cake mix.
1/3 cup peanut butter (optional)
About 1 1/4 cups miniature marshmallows
Directions
Prepare cake mix as directed on package except mix batter in bowl.
Spoon into paper lined plastic muffin cups or custard or coffee cups, filling 1/2 full.
Place 1 teaspoon peanut butter in center of each cupcake; top with 4 marshmallows.
Microwave uncovered 5 cups at a time 1 1/2 minutes.
Rotate or rearrange cups and microwave until cake is no longer doughy, 30 seconds to 1 minute.
Immediately remove from cups; cool slightly
