 Butter stick2 , softened
 Sugar1/2 Cup (16 tbs)
 Vanilla extract1/2 Teaspoon
 Almond extract1/2 Teaspoon
 Flour2 Cup (16 tbs)
 Salt1/4 Teaspoon
 30 unblanched almonds

Directions

1. Preheat oven to 325°F. In a medium bowl, beat butter and sugar with an electric mixer on medium speed until light and fluffy. Beat in vanilla and almond extract.
2. Add flour and salt and mix until blended. Shape dough into 1-inch balls and insert an almond, leaving about one third of nut exposed. Place 1 inch apart on ungreased cookie sheets.
3. Bake 10 to 15 minutes, until cookies are pale golden, not brown. Let stand 2 minutes, then remove to a rack and let cool completely.
