Ingredients
1 garlic clove, chopped
3 tbsp bread crumbs
1 tbsp paprika
1 tbsp hazelnuts, crumbled
1 tbsp parsley, chopped
1 tbsp mint, chopped
2 lamb rib roasts, prepared
Knobs of butter
Salt and pepper
1 tbsp oil
Directions
Preheat oven to 450 °F (230 °C).
In a small bowl, combine garlic, bread crumbs, paprika, hazelnuts, parsley and mint.
Set aside.
Coat fatty side of lamb with half the bread crumb mixture.
Dot with butter.
In a skillet, heat oil.
Sear roast lamb all over.
Transfer roast lamb to an ovenproof dish.
Season with salt and pepper.
Roast in oven 15 minutes.
Turn over once halfway through cooking.
Remove from oven.
Coat roast lamb with second half bread crumb mixture.
Roast in oven 5 minutes.
