1 3/4 cups (430 ml) all-purpose flour
 
1/2 cup (125 ml) sugar
 
1 tsp (5 ml) baking powder
 
1/2 tsp (2ml)salt
 
1 tsp (5 ml) grated lemon peel
 
2 eggs
 
2/3 cup (160 ml) milk
 
1/3 cup (80 ml) melted butter
 
2/3 cup (160 ml) jam

Directions

–  Preheat oven to 400 °F (205 °C).
–  Butter a muffin pan.
–  In a bowl, sift flour, sugar, baking powder, and salt. Add lemon peel, eggs, milk, and butter. Stir.
–  Fill muffin pan (1 tbsp or 15 ml per cup) with a first layer of batter, top with 1 tsp (5 ml) jam, and cover with a further 1 tbsp (15 ml) of batter. Bake 12 to 15 minutes.
