Surimi Pitas Recipe
Ingredients
| Crab | 8 Ounce, rinsed | |
| 6 tablespoons light, reduced-calorie mayonnaise | ||
| 1/4 cup plain nonfat yogurt | ||
| 1/2 teaspoon grated lemon rind | ||
| 1/4 cup sliced green onion | ||
| 1/2 cup diced ripe tomato, seeded | ||
| 1/2 cup diced unpeeled cucumber, seeded | ||
| Cilantro | 1 Tablespoon, finely chopped | |
| Hot pepper sauce | 1 Dash | |
| 5 1-ounce whole-wheat pita breads | ||
| 5 small pieces leaf lettuce | ||
Directions
In a small bowl, combine all ingredients except bread and lettuce.
Cover and refrigerate until thoroughly chilled.
Split each pita carefully around top edge of bread, about one-third of the circumference of the bread.
Insert lettuce leaf in pita and fill with 1/2 cup surimi mixture.
