Super Quick Bean Sandwich Recipe

Ingredients

 
1 cup canned vegetarian baked beans
 
2 tablespoons nonfat cottage cheese
 
4 slices nonfat whole-grain bread or 2 nonfat whole-grain bagels, split in half
 
1/4 teaspoon ground paprika

Directions

1. Mash the beans slightly and spread on the bread or bagel half.
Preheat broiler.
2. Top each open-faced sandwich with 1/2 tablespoon cottage cheese.
Sprinkle with paprika.
3.Place the bean sandwiches under the broiler until they are warm and slightly brown.
Variation - Delete the cottage cheese. Sprinkle the beans with minced garlic, chili powder, and chopped scallions.
