Super-Moist Bran Muffins Recipe

Ingredients
1 1/2 cups bran
2 cups whole wheat flour
3/4 cup wheat germ
Shredded apples, chopped nuts or raisins (optional)
1 teaspoon baking powder
1 teaspoon baking soda
Pinch of salt
1 1/4 cups nonfat yogurt, flavor of choice
1/4 cup vegetable oil or applesauce
1/2 cup honey
1/4 cup molasses
1 egg or 2 egg whites
Directions
Combine the bran, whole wheat flour, wheat germ, fruit or nuts, baking powder, baking soda and salt in a large bowl; mix well.
Combine the yogurt, vegetable oil, honey, molasses, egg and 1 cup water in a medium bowl; blend well.
Stir the yogurt mixture into the flour mixture just until moistened.
Fill greased or paper lined muffin cups.
Bake at 350 degrees for 20 to 25 minutes or until lightly browned and top springs back when touched.
Combine the yogurt, vegetable oil, honey, molasses, egg and 1 cup water in a medium bowl; blend well.
Stir the yogurt mixture into the flour mixture just until moistened.
