| 2 carrots, match-stick cut, blanched 3 to 5 minutes | ||
| 1 cup cauliflower, blanched 1 or 2 minutes | ||
| Green onions | 1/4 Cup (16 tbs), sliced | |
| Parsley | 2 Tablespoon, chopped | |
| Garlic | 1 Clove (5gm), crushed | |
| Red wine vinegar | 1 1/2 Cup (16 tbs) | |
| 1 cup salad oil, or use part olive oil | ||
| Sugar | 1/2 Cup (16 tbs) | |
| Salt | 1 Teaspoon | |
Directions
Combine vegetables in a large bowl. Combine garlic, vinegar, oil, sugar, and salt in a quart jar, and shake to blend thoroughly. Pour over vegetables and mix gently. Cover tightly and refrigerate overnight or longer.
