Ingredients

 
1 1/4 cups Kretschmer Wheat Germ, regular
 
3 cups flour
 
3 tsps. baking powder
 
1 tsp. salt
 
2 tsps. cinnamon
 
1 cup chopped nuts
 
2 eggs
 
1 3/4 cups sugar
 
2 tsps. vanilla
 
2/3 cup cooking oil
 
3 cups grated zucchini

Directions

Mix together, wheat germ, flour, baking powder, salt, cinnamon and nuts.
Beat eggs until light-colored and fluffy.
Beat in sugar, vanilla and oil.
Stir in zucchini.
Gradually stir in wheat-germ mixture.
Turn into 2 greased and floured 8 1/2 x 4 1/2 x 2 1/2-inch loaf pans.
Bake in 350°F oven for 1 hour, until a pick inserted into center comes out clean.
If using glass pans, bake at 325°F.
Cool for 5 to 10 minutes.
Remove from pans and cool on rack.
