Ingredients

 2 chickens (2-1/2 to 3 pounds each), cut up
 Asparagus2 Pound, trimmed
 Mint leaves1/2 Cup (16 tbs)
 Garlic1 Clove (5gm)
 Lemons2 , thinly sliced
 Butter4 Tablespoon, cut into pieces
 Salt To Taste
 Pepper To Taste

Directions

Remove skin from chicken, if desired.
Arrange chicken pieces in a roasting pan or Dutch oven.
Lightly season with salt and pepper.
Arrange asparagus spears over chicken.
Mince mint and garlic; sprinkle over chicken and asparagus.
Arrange lemon slices over all.
Dot with butter.
Cover.
Bake in a preheated 350-degree oven for 30 to 45 minutes, or until chicken is cooked through.
