Sunshine Rice Casserole Recipe
Ingredients
| Cooked rice | 2 Cup (32 tbs) | |
| Carrots | 2 1⁄2 Cup (40 tbs), finely grated | |
| American cheese | 1 1⁄4 Cup (20 tbs), grated | |
| Eggs | 2 , well beaten | |
| Milk | 1⁄4 Cup (4 tbs) | |
| Onion | 1 Tablespoon | |
| Onion powder | 1⁄4 Teaspoon | |
| Butter/Margarine | 1 Tablespoon, melted | |
| Salt | 1 Teaspoon | |
| Pepper | 1⁄8 Teaspoon |

Directions
1. In a bowl combine all ingredients and toss well but lightly together.
2. Butter a 1 1/2 quart casserole and place the combined ingredients into it.
3. Cover and bake in a slow oven (325° F.) for 45 minutes.

4. Serve the dish with garnish as desired.
