1 (10 to 12 pound) pork leg (fresh ham)
Whole cloves
1 (6 ounce) can frozen orange juice concentrate, thawed and undiluted
1/2 cup molasses
1/4 cup prepared mustard
1 tablespoon grated orange rind
Peach halves (optional)
Fresh parsley sprigs (optional)
Directions
Place ham, fat side up, on a rack in a shallow roasting pan.
Score fat on ham in a diamond design, and stud with cloves.
Insert meat thermometer, making sure it does not touch fat or bone.
Combine orange juice and next 3 ingredients.
Brush ham with juice mixture.
Bake, uncovered, at 325° for 3 to 4 hours or until meat thermometer registers 160° (18 to 20 minutes per pound).
Baste ham with juice mixture every 30 minutes.
Garnish with peach halves and fresh sprigs of parsley, if desired.
