Ingredients

 
4 cups grated carrots (about 8 medium-large)
 
1 can (20 ounces) pineapple chunks in juice, drained, or 2 cups fresh pineapple chunks
 
2 cans (11 ounces each) mandarin orange sections in juice or light syrup, drained
 
1 cup golden raisins
 
DRESSING
 
3/4 cup nonfat sour cream
 
1/2 cup nonfat or reduced-fat mayonnaise

Directions

1. Combine the carrots, pineapple chunks, oranges, and raisins in a large bowl, and toss gently to mix. Combine the dressing ingredients in a small bowl, and spread over the carrot mixture. Toss gently to mix well.
2. Cover the salad and chill for at least 2 hours before serving.
