Sunset Punch Recipe
Ingredients
| Watermelon | 1.5 Kilogram | |
| 2 cups watermelon juice | ||
| 2 cups unsweetened pineapple juice | ||
| 1/4 cup of lemon or lime juice | ||
| Soda water | 4 Cup (16 tbs) | |
| Syrup to taste | ||
| 1 cup watermelon balls | ||
| Pineapple | 1/2 Cup (16 tbs) | |
| Mint leaves | ||
Directions
Cut watermelon in half and cut out the red flesh, including 1 cm (1/2 inch) white rind.
Make 1 cup of watermelon balls (or dice into small cubes).
Remove seeds from remaining flesh and put in a blender or mash well.
Strain pulp through a wire strainer.
Mix fruit juices and fruit.
Chill well.
Just before serving add soda water and a little syrup if necessary.
Pour into punch glasses and garnish with watermelon balls and pineapple wedges or segments of fruit.
Makes 12-18 punch glasses.
