Sunrise Health Cake Recipe
Ingredients
| Ripe banana | 1 , mashed | |
| 1/2 c. low calorie margarine, softened | ||
| Egg Beaters | 3/4 Cup (16 tbs) | |
| Crushed pineapple | 1/2 Cup (16 tbs), undrained | |
| 1 apple, peeled & chopped fine | ||
| 1 c. unsweetened apple juice | ||
| Vanilla | 1 Teaspoon | |
| Unbleached flour | 3 Cup (16 tbs) | |
| Baking powder | 1 1/2 Teaspoon | |
| Soda | 1 Teaspoon | |
| Cinnamon | 1 Teaspoon | |
| Nutmeg | 1/2 Teaspoon | |
| Dates | 1 2/3 Cup (16 tbs), chopped | |
| Pecans and walnuts | 1/2 Cup (16 tbs), chopped | |
Directions
Blend mashed banana and margarine together.
Add other liquid ingredients and mix well.
In separate bowl mix flour, baking powder, soda, cinnamon and nutmeg together.
Then add dry ingredients slowly to liquid while mixing at a low speed on the electric mixer.
Lastly, add dates and nuts.
Bake at 350° for 30-40 min
Cake is done when a knife or toothpick inserted comes out clean.
Add other liquid ingredients and mix well.
