Sunny Tortellini Recipe
Sunny Tortellini is a very interesting tortellini recipe. Most of my friends and almost all of my neighbors describe this Sunny Tortellini recipe of mine as a Goldie-oldie. I am sure you will too.

2 cups (480 ml) nonfat plain yogurt
1/4 cup (60 ml) finely chopped sun-dried tomatoes
2 scallions chopped
1/2 tsp (3 ml) dried thyme freshly ground black pepper, to taste dash of tamari or soy sauce
1 lb (455 g) cheese-filled spinach tortellini
1 large onion, chopped
2 shallots, chopped
2 cloves garlic, crushed
3-5 tbs (45-75 ml) vegetable oil
1 1/2 lbs (683 g) mushrooms, sliced
Directions
Boil water for the tortellini.
Combine the yogurt, tomatoes, scallions, thyme, pepper and tamari.
Mix well and set aside.
Cook the tortellini according to package directions.
While tortellini are cooking, saute the onion, shallots and garlic in oil.
Add the mushrooms and continue cooking, stirring occasionally, for 15-20 minutes or until wilted.
When the tortellini are done, drain them and return them to a pot.
Add the mushroom mixture immediately and toss.
Add the yogurt mixture, stirring to coat the pasta and mushrooms.
Combine the yogurt, tomatoes, scallions, thyme, pepper and tamari.
Mix well and set aside.
