Sunny Citrus Souffle Recipe
Ingredients
| Boiling water | 2 Cup (16 tbs) | |
| 2 packages lemon-flavored gelatin | ||
| 1 3/4 cups lemon-lime carbonated beverage | ||
| Lemon peel | 1 Teaspoon, grated | |
| Lemon juice | 1/4 Cup (16 tbs) | |
| 2 cups chilled whipping cream, whipped | ||
| Few drops yellow food coloring | ||
Directions
1. Tie an aluminum foil collar around top of a 1 1/2-quart souffle dish. Set aside.
2. Pour boiling water over gelatin in a bowl and stir until dissolved. Add carbonated beverage and lemon peel and juice; blend thoroughly. Chill until mixture is slightly thickened.
3. Beat gelatin until foamy. Fold in whipped cream and food coloring. Spoon mixture into prepared souffle dish. Chill until firm (about 3 hours).
4. Carefully remove foil collar.
