2 tbs (30 ml) cooking oil
2 cups (480 ml) Sunchokes, chopped
1 cup (240 ml) Lima Beans, cooked
1 cup (240 ml) Haricot Verts, cut, or green or yellow wax beans
1 cup (240 ml) chopped red or green bell pepper
1/2 cup (120 ml) niblet corn
2 tbs (30 ml) butter or margarine
1/2 tsp (3 ml) salt
1/4 tsp (1 ml) pepper
2 tbs (30 ml) chopped parsley
2 tbs (30 ml) Fresh Herbs, chopped, such as Basil, Chives, Chervil, Savory, Thyme or Rosemary
Directions
In a large skillet, heat oil.
Saute sunchokes for 5 minutes.
Add lima beans, haricot verts, bell pepper and corn.
Cook 5 minutes more, stirring frequently.
Add butter; stir in remaining ingredients; heat through.
