Sunchoke Sorrel Puree Recipe
Ingredients
4 ounces unpeeled sunchokes,chopped
3 to 4 ounces sorrel, stems and tough ribs removed, shredded
1/4 cup minced onion
1 teaspoon minced garlic
2 tablespoons rendered chicken fat and/or butter
4 cups brown chicken stock
Salt and white pepper to taste
Minced fresh chives or green onion tops
Directions
Cook sunchokes, sorrel, onion and garlic in chicken fat, covered, 10 minutes.
Add stock, cover, bring to gentle boil, lower heat and simmer 20 minutes or until sunchokes are soft.
Puree, reheat and season with salt and pepper.
Garnish with chives.
