 1 lb. Jerusalem artichokes, trimmed and sliced 1/4 inch thick
 1/4 cup reconstituted natural butter-flavored mix
 Red wine vinegar2 Teaspoon
 Snipped parsley1 Tablespoon
 Dry mustard1/2 Teaspoon
 Lemon peel1/2 Teaspoon, grated
 Pepper1/8 Teaspoon
 1 tablespoon unsalted sunflower nuts

Directions

In 2-quart casserole, combine all ingredients, except nuts.
Mix well.
Cover.
Microwave at High for 8 to 12 minutes, or until tender, stirring after half the time.
Sprinkle with sunflower nuts.
