Sunburst Sundae Cups Recipe
Ingredients
| Flour tortillas | 7 inch | |
| Cooking oil for deep-fat frying | ||
| Sugar | 2 Tablespoon | |
| Ground cinnamon | 1/2 Teaspoon | |
| 1 qt. peach frozen yogurt | ||
| 2 cups fresh blueberries, sliced strawberries, or other fruit | ||
Directions
1. Cut tortillas into sun shapes. In a large heavy saucepan heat 2 inches oil to 360°. Cook tortillas, 1 at a time, 30 to 45 seconds or till crisp, using a ladle to hold tortillas down in center, forming a cup. Empty ladle and remove from pan. Remove tortillas with a slotted spatula, draining excess oil from tortilla cup back into pan; transfer tortilla cup to paper towels. Repeat with remaining tortillas.
2. Combine sugar and cinnamon; sprinkle over cooked tortilla cups while warm. To assemble sundaes, place a scoop of frozen yogurt in each tortilla cup. Top with fresh fruit.
