Ingredients

 
10 small new potatoes
 
2 tablespoons water
 
1/4 cup olive oil
 
3 tablespoons vinegar
 
2 tablespoons chopped fresh parsley
 
1/2 teaspoon garlic salt
 
1/2 teaspoon pepper
 
3 1/4 teaspoon dried whole oregano
 
Lettuce leaves

Directions

Wash potatoes.
Prick each potato twice with a fork, place in a 2-quart casserole, and add water.
Cover with heavy-duty plastic wrap, and microwave at HIGH for 9 minutes or until tender, stirring after 4 minutes.
Let stand 2 minutes.
Drain and cool.
Cut potatoes into thin slices.
Combine olive oil, vinegar, parsley, garlic salt, pepper, and oregano in a jar.
Cover tightly, and shake vigorously, pour over potatoes, and toss gently.
Chill thoroughly.
Serve over lettuce leaves on individual salad plates.
