Summertime Fruit Pizza Recipe
Ingredients
| 1 burrito-sized fat-free flour tortilla cinnamon | ||
| 4 oz. fat-free cream cheese | ||
| Honey | 1/4 Cup (16 tbs) | |
| Vanilla | 1 Teaspoon | |
| 1/4 cup fat-free ricotta cheese | ||
| 3 kiwi, peeled and sliced | ||
| Strawberries | 1 Cup (16 tbs), sliced | |
| 1 peach or nectarine, sliced | ||
| 1/4 cup all-fruit apricot spread, warmed | ||
Directions
Preheat oven to 375 degrees.
Spray a pizza pan with cooking spray.
Place tortilla on pan; sprinkle lightly with cinnamon.
Bake about 4 to 5 minutes until edges begin to lightly brown.
Remove from oven and cool.
Beat together the cream cheese, honey and vanilla, then beat in the ricotta cheese till smooth.
Spread the cheese mixture atop the cooled crust.
Arrange the kiwi, strawberries and peaches on top, slightly overlapping.
Chill in the refrigerator while preparing glaze.
Microwave the apricot spread in a small microwaveable bowl on high for 1 minute.
Using a clean pastry brush, brush the glaze over the fruit.
Chill 1 hour before serving.
