Summer Tomato And Melon Soup Recipe
Ingredients
3 cups peeled and seeded ripe tomatoes
2 medium-size ripe cantaloupes, seeds and rind removed
2 large cucumbers, peeled and seeded (reserve 1/2 cucumber and chop for garnish)
Grated zest of 1 small orange
1/4 cup finely chopped fresh mint, plus additional fresh mint as garnish
1 cup dairy sour cream or Creme Fraiche
Directions
Combine tomatoes, melons and cucumbers in a blender or food processor fitted with a steel blade.
Process until smooth.
Transfer to a bowl.
Stir in orange zest and 1/4 cup mint.
Whisk in sour cream or crime fraiche and chill.
