Ingredients

 
2 Granny Smith apples, cored and diced
 
1/2 pound small, red potatoes, cooked and sliced
 
1/4 inch thick
 
1 cup frozen peas, thawed and drained
 
1 cup plain yogurt
 
2 teaspoons prepared horseradish
 
1 teaspoon chopped fresh mint or 1 teaspoon dried mint leaves
 
1/4 teaspoon salt crisp lettuce leaves

Directions

Combine apples, potatoes and peas in medium-size bowl.
Combine yogurt, horseradish, mint and salt in small bowl; mix well.
Pour dressing over apple mixture; toss.
Cover and chill several hours.
Serve on lettuce.
