Mixed Veggies in Caramelized Onion Recipe Video

Directions

Preheat nonstick skillet to medium high heat.
Add olive oil and onion. Caramelize until it starts to get color on one side, it will take 4-6 minutes.
Add the rest of vegetables, oregano, lemon zest and continue to caramelize mixing occasionally for 8-10 minutes, or until they start to caramelize.
When you see first caramelization signs add 2 tablespoons of water and let the vegetables soften a bit. If they not soft enough add a little more water.
Now add olives, lemon juice, salt and pepper and continue to cook for another minute.
Transfer to a platter and add mint leaves on top.
Serve warm or cold.
