Summer Vegetable Paella Recipe
Ingredients
1 teaspoon vegetable or olive oil
3 cups broccoli flowerets
2 zucchini, diagonally sliced
1 tomato, diced
2 fresh California nectarines, sliced
Directions
Heat oil in large nonstick skillet over medium-high heat.
Add broccoli and zucchini; stir-fry 5 minutes or until vegetables are crisp-tender.
Add tomato and nectarines; cover and cook 2 to 3 minutes until heated through.
