Ingredients

 
2 cups finely sliced raw spinach
 
1 1/2 cups sliced peeled cucumbers
 
1/3 cup sliced green onions, including some of the tops
 
1/2 cup sliced radishes
 
1 pint (2 cups) creamed cottage cheese
 
1 cup commercial sour cream
 
2 teaspoons lemon juice
 
1/2 teaspoon salt
 
Freshly ground pepper
 
Parsley and paprika for garnish

Directions

In a bowl combine sliced spinach, sliced cucumbers, onions, and radishes; toss together lightly.
Arrange on 4 individual salad plates or in wooden salad bowls.
In center of each serving, place a mound of cottage cheese.
Blend together sour cream, lemon juice, salt, and pepper, and pour over the salads.
Sprinkle top of each salad with a little paprika and chopped parsley, if you wish
