Spinach Summer Salad with Strawberry Dressing Recipe Video

Directions
GETTING READY
1 Preheat the oven to 350 degrees F.
2 Roast the beets for about 40 minutes along with some olive oil and fresh herbs.
3 Peel the beets and cut the in to slices.
MAKING
4 For the dressing, cut the crowns from the strawberries and put them in a food processor.
5 Pour in 1/3rd cup of olive oil and 2 tablespoons of balsamic vinegar over the strawberries.
6 Sprinkle with some sea salt and blend until pureed.
FINALIZING
7 In a bowl, place the baby spinach leaves and arrange the sliced beets on top.
8 Place a few small blobs of goat cheese on the salad.
9 Drizzle generously with the strawberry dressing.
SERVING
10 Serve at once.
TIP
You can also prepare the dressing with raspberries or blueberries.
