Directions

GETTING READY
1.Cut the onions finely and remove the tomato skin.
2.Dice aubergines in 1/2 inch pieces and put in colander with sprinkling of salt.
3.Dice the peppers after seeding.
4.Make 1/4 inch slices ofcougrettes.

MAKING
5.In a pan, heat the oil and cook onion and garlic in it.
6.Wash the aubergines and dry them with a kitchen towel.
7.Stir in courgettes, tomatoes and pepper along with aubergines.
8.Add seasoning of salt and pepper.
9.Stir in coriander seeds and simmer on low flame for 40 minutes after covering.

SERVING
10.Serve in bowls or freeze for later use.
