Summer Herb Tomato Salad Recipe
Ingredients
| 6-8 fine ripe tomatoes | ||
| Onion | 1 Small | |
| Olive oil | 1/2 Cup (16 tbs) (Dressing:) | |
| Lemon juice | 2 Tablespoon (Dressing:) | |
| Salt | 3/4 Teaspoon (Dressing:) | |
| Ground pepper | 1/2 Teaspoon (Dressing:) | |
| Marjoram | 1/2 Teaspoon, chopped (Dressing:) | |
| Basil | 1 Teaspoon, chopped (Dressing:) | |
| Parsley | 2 Tablespoon, finely chopped (Dressing:) | |
| Garlic | 1 Clove (5gm), minced (Dressing:) | |
Directions
Remove the core from the tomatoes and cut them in vertical slices.
Peel and slice the onion and separate into rings.
Arrange the tomato slices and onion rings in layers in a shallow bowl.
Combine the ingredients for the dressing and pour over the tomatoes and onions.
Cover and refrigerate 15 minutes before serving.
