Summer Fruit Compote Recipe

Ingredients
250g strawberries, huffed
300mI fruity white wine
1/4 tspn grated lemon rind
125g redcurrants
250g raspberries, hulled
60g caster sugar
1 clove
125g blackcurrants
Directions
If the strawberries are large, cut them in halves or quarters.
Arrange in a glass bowl with the raspberries.
Chill.
Combine the wine, caster sugar, lemon rind and clove in a saucepan, bring to the boil, stirring constantly; add the redcurrants and blackcurrants and simmer over very gentle heat until the fruit is tender.
Cool.
Having discarded the lemon rind and clove, add the redcurrant mixture to the glass bowl.
Chill until required.
