8 ears of corn
 
1 jalepeno,chopped fine
 
1 red onion,diced
 
1 yellow and 1 red bell pepper,diced
 
¼ cup chopped cilantro
 
Ingredients for dressings
 
4Tbls fresh lime juice
 
4 Tbls rice vinegar
 
½ cup olive oil
 
1 tsp sugar
 
2 Tbls ground fresh ginger root, squezzed for It’s juice.
 
¼ tsp chile garlic paste
 
salt and pepper( to taste)

Directions

1) Ears of corn stripped of the kernels and place in a bowl.
2) Add onions,peppers and cilantro
3) Wish the ingredients of the dressing together, and pour over the corn and the vegetables, season with salt and pepper.
