1 medium or 2 small spring chickens
2 oz butter
For the peas:
1 lb fresh shelled peas, or 2 8 oz packets of frozen
1 cos lettuce
A few spring onions
Gill water
6 sugar knobs
2 oz butter
Pepper and salt
Directions
Melt the butter in a large casserole.
Brown the chickens, turning them occasionally in the butter.
Cover the casserole and cook in a moderate oven for about an hour.
Shell the peas, or open your packets, and trim the spring onions.
Put water, sugar and seasoning into a good sized saucepan so that the liquor does not boil over, and bring to the boil.
Put in the peas, lettuce, onions and butter.
Cover, and simmer gently until cooked.
Pour over the chickens, re cover, and continue to cook for a further three quarters to one hour.
