Sumac Mili Recipe
Ingredients
4 small wholefish or 1 large fish cut into pieces
Flour
Olive or nut oil
Directions
Prepare fish as directed on page 44, opposite.
Dredge fish in flour and deep or shallow fry in oil until golden brown and cooked through.
Remove and leave to drain off excess oil.
Serve accompanied by Tahini Sauce or Pine Nut Sauce (see page 21), small pieces of fried cauliflower, and Lebanese bread fried in the oil in which the fish was cooked.
