Suimono Recipe

Ingredients
6-inch by 2-inch piece kombu
6 cups water
1-1/2 cups katsuobushi
1/8 teaspoon sugar
1/2 teaspoon salt
Directions
Break kombu into several pieces, combine with rest of ingredients, bring to boil and cook rapidly 3 minutes.
Do not overcook.
Strain and reserve kombu and katsuobushi for making Dashi #2.
DASHI #2 Repeat Dashi #1 recipe reusing reserved kombu and katsuobushi and adding an additional 1/2 cup katsuobushi.
Boil 5 minutes.
This increases the flavor.
