1. On a baking tray, place unbroken walnuts and place inside an oven at 350°F to become crisp and hot - say fifteen minutes
2. In a saucepan, measure the sugar and madd strained orange juice, made up to quarter pint with water, and dissolve the sugar gradually
3. Allow to come to a boil, cook rapidly until a small drop spooned on a saucer of cold water forms a soft ball
4. Turn the heat off, add orange rind and the hot walnuts into it; stir till the walnuts are coated and the texture is creamy
5. Transfer quickly into a large buttered plate, using a fork to separate the walnuts, and allow to cool

6. Serve/Use as appropriate
